4 skinless, boneless chicken breast halves
All-purpose flour – 1/4 cup
A pinch of salt and pepper
Dried oregano – 1 tablespoon
Olive oil – 2 tablespoons
Butter – 3/4 cup
Sliced Portobello mushrooms -3 cups
Sun-dried tomatoes – 3/4 cup
Packed fresh spinach – 1/2 cup
Marsala wine – 1 cup
Take two pieces of wax paper, put chicken breasts in between them, and with a meat mallet, slice them in to 1/4 inch thickness. Sprinkle over the chicken pieces some pepper, flour, salt and oregano.
Take a deep frying pan, fry coated chicken breast pieces in olive oil on medium heat. Cook until the pieces are properly done, turn it over to cook uniformly. Keep the pieces aside, and keep them warm.
Take the same pan and melt some butter on medium heat; add vegetables like sun-dried tomatoes, mushrooms and Marsala wine in that mixture. Cook the entire mixture for about 10 minutes, stirring the mixture occasionally. Add some spinach and cook for around 2 minutes. Serve these vegetables over the fried chicken breasts.
